The beauty of this dish is you can add or subtract ingredients according to what you have on hand. 

 

 

Summer Corn/Bean Salad
This is my favorite summer recipe and a great way to use corn on the cob from the night before. 
Add the following ingredients into a large bowl:

- Slice the kernals off of 2-3 ears of cooked corn 
- Add a 12oz can of black beans, rinsed

- Add 1 cup chopped red onions

- Add 1 cup chopped cucumers. (peel, de-seeded and diced)

- Add 1/4 cup Extra Virgin Olive Oil, salt & pepper to taste. 

 

OPTIONAL ADD INS:

- a handful of crumbled Feta cheese and 1 diced tomato or a handful of cut cherry tomatoes

- chopped cilantro and garlic powder.


Serve as a side or main dish. I make it throughout the summer in various forms. My kids and MIL love this dish. Even my husband, ("is this vegetarian??") enjoys this.
